Four Cozy, Flavor-Packed Dinners That Bring Seasonal Comfort to the Table—with Just One Pan to Clean

As summer slowly gives way to fall in the Texas Hill Country, the rhythm of the kitchen begins to change.

The grill doesn’t disappear, but it shares the spotlight with the oven once again. Farmers markets fill with squash, sweet potatoes, apples, peppers, and onions. Evenings arrive a little earlier, and after busy days filled with work, school, and fall activities, there’s something comforting about gathering around a meal that fills the house with the aroma of roasted vegetables, fresh herbs, and something delicious bubbling away in the oven.

At Fischer & Wieser, we’ve always believed some of the best dinners are also the simplest. A single sheet pan, fresh seasonal ingredients, and a pantry stocked with a few favorite sauces can transform an ordinary weeknight into something that tastes like it took hours to prepare.

This month we’re sharing four of our favorite sheet pan dinners inspired by the flavors of fall. Each recipe celebrates seasonal vegetables and lets one of our signature sauces or jams do much of the flavor-building, making dinner easier without sacrificing homemade flavor.

There always seems to be one evening in September when it happens.

The grill gets its cover for the first time in months. The air feels just a little cooler. Sunset comes earlier. And instead of thinking about burgers or backyard cookouts, you’re craving something warm from the oven.

Welcome to fall.

It’s the season of cozy comfort food, but it’s also one of the busiest times of year. School is back in session, sports practices fill the evenings, calendars get crowded, and somehow the question, “What’s for dinner?” starts arriving earlier every day.

That’s exactly why easy weeknight dinners and sheet pan dinners have become such fall favorites. Everything cooks together on one pan, vegetables caramelize beautifully, cleanup is minimal, and dinner is ready in about 40 minutes.

Better yet, when you finish everything with a flavorful Fischer & Wieser sauce or glaze, everyday ingredients become something worthy of a weekend dinner party.

Five Rules for the Perfect Sheet Pan Dinner

Before you start roasting, these simple tips will help every sheet pan dinner come out beautifully browned instead of steamed.

1. Give Everything Room

Crowding the pan traps steam. Spread vegetables into a single layer, and if necessary, use two pans.

2. Roast at High Heat

For most sheet pan dinners, 425°F creates the perfect balance of caramelized vegetables and juicy chicken.

3. Match Cooking Times

Dense vegetables like carrots, squash, potatoes and parsnips need longer than peppers or Brussels sprouts. Add quicker-cooking vegetables later if needed.

4. Start Dry

Pat chicken dry before seasoning and make sure vegetables aren’t wet from washing. Dry ingredients roast instead of steam.

5. Save Fruit Sauces for the End

Fruit-forward sauces like Das Peach Haus Peach Salsa, Original Roasted Raspberry Chipotle Sauce and Charred Pineapple Bourbon Sauce should be added during the last 8–12 minutes of cooking so they caramelize without burning.

Sheet Pan Peach Salsa Chicken Thighs with Roasted Fall Vegetables

Sheet Pan Peach Salsa Chicken Thighs with Roasted Fall Vegetables

Featured Product: Das Peach Haus Peach Salsa

If one recipe captures the transition from late summer into fall, this is it.

Bone-in chicken thighs roast alongside sweet potatoes, Brussels sprouts and red onion until everything develops beautifully caramelized edges. During the final 10 minutes, Das Peach Haus Peach Salsa is generously spooned over each chicken thigh, creating a glossy glaze that’s sweet, savory and just a little spicy.

Roasting transforms the peaches into something deeper and richer than fresh fruit—almost like a warm chutney—making this surprisingly perfect for autumn.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 sweet potatoes, cubed
  • 1 pound Brussels sprouts, halved
  • 1 large red onion, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ cup Das Peach Haus Peach Salsa

Instructions

  1. Preheat oven to 425°F.
  2. Toss vegetables with olive oil and seasonings before arranging around the outside of a sheet pan.
  3. Season chicken and place in the center.
  4. Roast for 25 minutes.
  5. Brush Peach Salsa generously over each chicken thigh.
  6. Return to oven for another 10–12 minutes until the glaze caramelizes and chicken reaches 165°F.
  7. Allow to rest five minutes before serving.

Fall Flavor: Sweet potatoes, roasted onions and Brussels sprouts soak up the savory chicken juices while the peach salsa becomes rich, sticky and wonderfully caramelized.

Variation: Substitute fingerling potatoes for sweet potatoes for an equally delicious sheet pan chicken and potatoes dinner.

Not every vegetable roasts at the same pace. For perfectly cooked sheet pan dinners, group vegetables by cooking time.

Roast 35–40 Minutes

  • Sweet potatoes
  • Butternut squash
  • Carrots
  • Parsnips
  • Beets
  • Fingerling potatoes

Roast 20–25 Minutes

  • Broccoli
  • Cauliflower
  • Bell peppers
  • Zucchini

Add During Final 8–12 Minutes

  • Cherry tomatoes

  • Fischer & Wieser sauces and glazes

Adding sauces near the end allows them to caramelize beautifully without burning.
