From the Farmstead with Mark Wieser

Food has a way of carrying memories of the seasons, family kitchens, and of the land itself. In this ongoing series, Fischer & Wieser co-founder Mark Wieser reflects on growing up on the now Fischer & Wieser Texas Hill Country farmstead and the foods that shaped his life. Through personal stories, regional history, and a deep love of flavor, Mark shares how tradition, curiosity, and a sense of place continue to inspire the products we make today.

Peach Salsa, Texas Roots, and the Ultimate Game-Day Snack

By Mark Wieser

Some foods don’t just show up on the table, they grow into our lives slowly, quietly, until one day you can’t imagine a gathering without them. Salsa is one of those foods.

Growing up, spicy flavors weren’t exactly common in German farming communities like ours. Yet somehow, Texas, with all its cultural crossings, became the place where salsa would finally find its footing. And like so many food stories in this state, it didn’t happen overnight.

When Salsa Was Still a Curiosity

It may be hard to believe now, but salsa and chips weren’t always the automatic pairing they are today. Even into the 1960s, salsa wasn’t a given at restaurant tables, and refilled bowls certainly weren’t a thing. Many people avoided it altogether, assuming it was painfully hot.

I still remember my first experiences with salsa with watery eyes, a runny nose, and a mouth on fire. And yet, I was hooked. There was something about that balance of heat, acidity, and freshness that kept pulling me back in. Texas has a way of doing that with food: it challenges you a little, then rewards you generously.

Chips & Salsa

Why It Took Time and Why It Worked

For much of American history, flavors from south of the Rio Grande didn’t make their way into everyday kitchens. It wasn’t until the latter part of the 20th century that salsa truly began to take off, eventually surpassing ketchup as the most popular condiment in the country.

Once Americans embraced salsa, they embraced it fully. Chips and salsa became the great equalizer — casual, affordable, and unintimidating. No silverware required, no rules attached. Just a bowl in the middle of the table and good company all around.

When Peaches Entered the Picture

Here in Gillespie County, peaches are more than a fruit — they’re a season, a tradition, and a point of pride. It was only natural that one day, those sweet Texas peaches would find their way into salsa.

The idea behind peach salsa is simple: balance. Sweet ripe peaches soften the heat of peppers and acidity of tomatoes, creating a flavor that’s layered, approachable, and endlessly versatile. It’s the kind of combination that surprises people the first time — and then quickly becomes a favorite.

At Fischer & Wieser, we’ve always believed that great products start with great ingredients and a sense of place. Peach Salsa was born from that philosophy, combining Texas-grown peaches with bold but balanced flavors that feel right at home on any table.

Peach Salsa and Game Day Go Hand in Hand

As March rolls around, kitchens and living rooms across the country start preparing for one thing: game day gatherings. Whether it’s March Madness, backyard watch parties, or last-minute get-togethers, the food needs to be easy, crowd-pleasing, and memorable.

That’s where peach salsa shines.

  • Serve it straight with tortilla chips for a classic snack that disappears fast.
  • Spoon it over grilled chicken or fish for a sweet-heat finish that feels effortless.
  • Use it as a taco topper or spoon it onto quesadillas for extra flavor without extra work.
  • Blend it into a chilled soup or gazpacho when warmer days arrive.

It’s one of those rare foods that works just as well straight from the jar as it does dressed up, which is exactly what you want when the game is on and no one wants to be stuck in the kitchen.

More Than One Way to Salsa

While Peach Salsa holds a special place for me, it’s just one expression of how far salsa has come. Today, there’s room for all kinds of flavors, smoky, spicy, sweet, and savory, depending on the mood and the menu.

That variety is what makes salsa such a staple now. It adapts. It travels. It fits right in whether you’re hosting a watch party, grilling for friends, or just opening a bag of chips at the end of the day.

A Texas Tradition, Still Evolving

It still amazes me how something once overlooked became such a defining part of American food culture. Maybe that’s the beauty of it. Salsa didn’t demand attention; it earned it, one bowl at a time.

With peach season just around the corner here in the Texas Hill Country, now is the perfect time to revisit this classic and make it part of your own traditions. Save the recipe. Share the jar. And most importantly, enjoy the way sweet and spicy come together, just like we do in Texas.

And if you’d rather skip the chopping and get straight to the snacking, Fischer & Wieser’s Peach Salsa, along with our other salsa varieties, is always ready to join your table, no matter who’s winning the game.
