You’ll Need 

  • 12 oz pasta  
  • 2½ cups chicken broth  
  • Rotisserie chicken or Italian sausage (optional)  
  • Parmesan  
  • Fresh basil  

Directions

Simply combine everything except the cheese in a large pot.

Simmer until the pasta is tender.

Finish with Parmesan and basil.

Skillet Baked Pasta 

Some nights you want something that tastes like baked pasta without actually baking it. 

Brown Italian sausage. 

Stir in Mom’s Special Marinara. 

Add cooked pasta.

Broil for three minutes.

The cheese gets bubbly. 

The edges become golden.

If one-pot meals win the cleanup award…

Use whatever vegetables are waiting to be cooked.

Season simply.

Sheet Pan Chicken & Garden Vegetables 

This recipe changes every week because your refrigerator changes every week.

Use: 

  • chicken thighs  
  • zucchini  
  • broccoli  
  • carrots  
  • bell peppers  
  • onions  
  • green beans  
  • Brussels sprouts  

Directions

Toss everything with olive oil, garlic, Italian seasoning, salt, and pepper. 

Roast at 425° for about 25 minutes. 

Just before serving, spoon a little warmed Mom’s Arrabbiata over the chicken if your family enjoys a touch of heat, or use Mom’s Garlic & Basil for a classic Italian finish.

Sheet Pan Sausage & Peppers 

This one feels like something from an Italian neighborhood market. 

Use:

  • Italian sausage.
  • Bell peppers.
  • Sweet onions.
  • Cherry tomatoes.

Directions

Toss the sausage, bell peppers, sweet onions, and cherry tomatoes with olive oil, garlic, Italian seasoning, salt, and pepper.

Roast at 425°F for about 25–30 minutes, turning everything once halfway through, until the sausage is cooked through and the vegetables are caramelized.

Serve over pasta tossed with warmed Mom’s Marinara, or pile everything into toasted hoagie rolls for an easy Italian-inspired sandwich.

There are few feelings better than opening the freezer on a busy Wednesday and remembering that dinner is already waiting. 

Casseroles have been saving weeknight dinners for generations, and for good reason. They feed a crowd, reheat beautifully, and often taste even better the next day.

Spend a little extra time on Sunday, and Wednesday practically takes care of itself. 

Easy Chicken Pasta Casserole 

This is comfort food at its finest and one of those recipes every family should have in their back pocket. 

You’ll Need 

  • 1 pound cooked pasta  
  • 2 cups shredded rotisserie chicken  
  • 2 cups mozzarella cheese  
  • ½ cup Parmesan  
  • Italian seasoning  

Mix everything together, pour into a casserole dish, top with cheese, and bake at 375°F for about 25 minutes until bubbly and golden. 

Serve with garlic bread and a simple salad.
