Southwest Nopales Huevos Rancheros

Medium yellow onion (diced)
- 1
Jalapeno (deseeded & diced)
- 12 oz
chorizo
- 6
large eggs
- 1 cup
Queso Fresco (crumbled)
Salt and pepper, to taste
- 6
Tostadas
- 1 cup
Cilantro, chopped
Directions
Heat oil in a skillet over medium heat. Add the onions and jalapenos. Saute until soft.
Add chorizo and cook until brown.
Reduce the heat to low and add a jar of Southwest Nopales Marinara and simmer for 3-4 minutes.
With the back of a wooden spoon, make wells in the sauce and carefully crack an egg into each well.
Add a pinch of salt and pepper to each egg. Cover and cook until the egg whites are set and the yolk is still runny.
Put a tostada on a plate, scoop out an egg with some sauce, and put on top of the tostada.
Sprinkle with queso fresco and cilantro. Enjoy!
